Preheat the oven to 350°F (175°C) and arrange the muffin cans with a paper liner or lightly grease with a cooking spray. In a large bowl, whisk together whole wheat flour, protein powder, baking powder, baking soda, cinnamon and salt. In another bowl, whisk the eggs, unsweetened apple lace, melted coconut oil, almond milk and vanilla extract until well mixed. Add the wet ingredients to the dry ingredients and mix until combined. Be careful not to overmix. Fold the diced apples and chopped walnuts and distribute evenly throughout the batter. Spoon the batter into the prepared muffin can and fill each cup to approximately 3/4 full. Top with diced apples and extra walnuts if necessary! Bake for 18-22 minutes or until the toothpick inserted into the center of the muffin is clean. Let the muffins cool on tin for 5 minutes and then transfer to a wire rack to cool completely.
