Instructions

Preheat the oven to 350°F (175°C) and arrange the muffin cans with paper or silicone liner. In a large bowl, whisk together almond flour, protein powder, baking powder, baking soda, cinnamon and salt. In a separate bowl, mix the eggs, almond milk, vanilla, applesauce, pumpkin puree, melted coconut oil and maple syrup (if used). Mix until smooth. Add the wet ingredients to the dry ingredients and stir gently until combined. Fold the chopped pecans. Divide the batter evenly between the muffin cups and fill about 3/4 each. Bake for 20-22 minutes or until the toothpick inserted in the center is clean. Let the muffins cool in a pan for 5 minutes and then transfer to a wire rack to cool completely.
