It is soft, crunchy in the best way, loads with cinnamon and topped with crunchy pecans to give it enough texture to come back for “one more bite.”
The best part? We throw away traditional round cake pans for a square baking dish. This means that this cake is easy to slice into neat little squares (or large cozy slabs, no judgment). Perfect for coffee breaks, fall brunch, or midnight snacks on bread.

Instructions
Preheat the oven to 350°F. Lightly apply it to an 8 x 8 inch square baking dish with coconut oil or cooking spray. In a small bowl, whisk coconut milk, pumpkin puree, melted coconut oil, vanilla extract, and apple vinegar until smooth. In a medium bowl, whisk together the coconut flour, almond flour, erythritol, cinnamon and baking soda. Pour the wet mixture into the dry mixture. Stir with a spatula until the dough is combined – it will be thicker and more like cookie dough than cake dough. Use clean hands to combine everything perfectly and incorporate it evenly. Throw the chopped pecans and mix them again with your hands, spreading evenly throughout the batter. bake:
Transfer the dough to the prepared baking dish and press down evenly. Bake for 25 minutes or until the edges are golden brown. Remove from the oven and place the pan on a wire rack to completely cool. Smooth the frost into the pan, slice it into squares and serve.
