Preheat oven to 325°F and line an 8 x 8 inch pan with parchment paper. Melt chocolate chips and butter in a microwave-safe bowl and stir until smooth. Let cool for 1 minute, then stir in the eggs and vanilla. In a separate bowl, combine almond flour, sweetener, cocoa powder, protein powder, baking powder, and salt. Add dry ingredients to wet ingredients and mix. Transfer the dough to the prepared pan. Unwrap the Quest Chocolate Chip Cookie Dough Bar and place between two sheets of parchment paper. Place them in the microwave for 5 seconds, use a rolling pin to roll each one out to about 4 x 8 inches, and place on top of the dough. Bake the brownies for 14-16 minutes. If desired, top with mini chocolate chips immediately after removing from the oven. Let cool for 1 hour, then cut into 16 pieces and serve.
