Chocolate Chip Pumpkin Cookies
2 Quest Bake Shop chocolate chip muffins, ½ cup almond flour, 1 tsp pumpkin pie spice, ¼ tsp salt, ¼ tsp cinnamon, 4 tbsp zero calorie sweetener, 2 tbsp melted butter, 1 room temperature egg, ¼ cup pumpkin puree

Preheat oven to 350°F. In a mixing bowl, crumble the muffins with your hands. Stir in the almond flour, pie spices, salt and cinnamon. In a separate bowl, mix the sweetener, butter, eggs and pumpkin until smooth. Add the dry ingredients to the wet ingredients and stir until well combined. Using a 1 ½ tablespoon cookie scoop, drop the cookies onto a baking sheet lined with parchment paper (you should get 12 cookies). Bake for 16-18 minutes. Remove and cool completely. Mix the icing and spoon it over the cookies. Allow the icing to set before serving.
