1 cup unsweetened white chocolate chips 1 tablespoon coconut oil 2 tablespoons sprinkles
method
Preheat oven to 350°F and prepare a 12-by-9-inch cake pan with nonstick spray and parchment paper. In a mixing bowl, combine almond flour, sweetener, protein, baking powder, and salt. Break the muffins into small crumbles and add to the dry ingredients. In a separate bowl, combine oil, ricotta, eggs, and vanilla. Add the dry ingredients to the wet ingredients and stir using a rubber spatula until no dry parts remain. Transfer the batter to the cake pan and bake for 17-20 minutes until cooked through. Once cooled, invert the cake onto a cutting board. Cut cake into 44 even cubes (about 1 inch). Mix the filling ingredients and transfer to a piping bag. Pipe about 1 tablespoon of the filling onto each half of the cake and sandwich with the remaining cake. Melt the white chocolate and coconut oil until smooth. Spoon the white chocolate over the top of each cake. Top with sprinkles and enjoy.
