In a large mixing bowl, use your hands to crush the muffins into small pieces. Add the cream cheese and mix until the dough is formed. Divide the dough into six uniformly sized bowls. Place the bowl on a baking sheet lined with parchment. In a microwave safe bowl, melt the white chocolate and coconut oil together until smooth. Soak each bowl in white chocolate and remove any excess IV before returning to the baking sheet. Repeat until all pumpkin balls are covered. Chill until the white chocolate is hard. Sprinkle with cinnamon and serve.
