Recent: June fun

Lunch on the last day of school was Key Lime Pie Sugar Bear Ice Cream!

Recently: Looking forward to June!

I had a great time on my trip to Universal, but I felt sad for the next few days. I missed them more than usual when they went to their father after spending so much time together. (In fact, Mazen is having the best time at the beach with his friends!)

The magic continues…

pool time

The pool is open and the weather is nice for swimming! It’s a great place for kids in the summer. And this is the first year Birch will be entering the season as a strong swimmer!

Friday After 5

Mazen joined the teen scene with Friday’s After Five, a downtown summer concert series. I like bumping into him hanging out with his friends to see what life is like for a teenager in 2026 (at least the visible parts!) How cool is that:

scooter walk

The scooter scene is also strong. We go on a “scooter walk” almost every night. At my boys’ request, I love walks at sunset. Win, win!

That view:

adult scene

When I wasn’t with the boys, I would go out to eat and spend too much money. We have to rewind it.

Aster happy hour

ACAC post-workout dinner at Bang!

My two must-haves from Bang:

Coconut rice and cilantro goat cheese dumplings

John Manny Night!

My favorite comedian, John Mullaney, came to Richmond and he was a must see! Be sure to check out his show on Netflix. “New in Town” is my favorite. He was a comedic genius and great in real life.

Dinner at Chez Fouchie

Afterwards, we went to dinner at Chez Foushee, known for its excellent French cuisine.

Working wine dates

Ivy convinced me to take my laptop to Michael Shapps in the afternoon. This was the best and worst choice of the week lol. But I felt like I was in the French countryside.

Not a bad place to write a blog post

I’ve started planning a full-fledged trip to Paris!

You can’t drink wine without cheese

Cath eats real food

To balance all these meals, here are some highlights from my healthy home.

Egg sandwich + watermelon

Oatmeal day!

cheerio + strawberry

lunch

I am totally addicted to salads with cottage cheese! Plus hummus. Usually blue cheese and pecans. And the salad always comes with orange marmalade dressing! In fact, I loved the dressing so much that I accidentally bought two jars of orange marmalade.

dinner

Salmon burger on English muffin

I tried to fill up as much as I could in the freezer before I moved! I made a spread using Greek yogurt and fresh dill that is perfect for burgers.

plenty of potatoes

Mazen requested a baked potato with bacon, so we had it with asparagus for dinner. Add yogurt and fresh dill to make it even more delicious!

spaghetti and meat sauce

Another children’s favorite. N/A There’s an Aperol Spritz in the back.

Pork bowl + rice bowl

Another freezer favorite is True Nature Hawaiian Pork and Coconut Rice with leftover roasted broccoli. (Use my link and code KATHEATS35 to get $40 off True Nature!)

We moved this week, so get ready for a new background in the next “recent” post. 🙂
