Make a cheesecake filling:In a stand mixer or large bowl, mix the pumpkin puree, soft cream cheese, vanilla and pumpkin stevia. Shake until smooth and creamy. Add coconut flour, pumpkin pie spices and salt. Mix until well incorporated. The mixture should be thick enough to roll without sticking to the hand. If it gets too wet, add another scoop of coconut flour.
Shaped into truffle bowls:Using a small cookie scoop, roll the mixture into 1-inch bowls. Place on a baking sheet or cookie sheet lined with parchment paper and cover with plastic wrap. Chill until firm for at least 30 minutes.
Prepare a chocolate coating:Melt sugar-free chocolate chips in a microwave bowl at 10-second intervals, or use a double boiler or small bowl on top of the pot over medium heat. Stir in coconut oil or butter for best results. Let the melted chocolate cool a little. This way, you won’t get too hot when soaking.
Coat pumpkin truffles:Using a fork, dip a bowl of chilled pumpkin in melted chocolate. Tap the excess chocolate coating and return it to the lined baking sheet. If necessary, sprinkle pumpkin pie spices or shredded coconut while the coating is still wet.
Chill and serve:Refrigerate until chocolate is set, about 15 minutes. Store in an airtight container in the fridge for up to 7 days. For longer storage, freeze in covered containers for up to 2 months.
