Do not boil. Transfer the mixture to a high-speed blender, such as a Vitamix. Add protein powder and mix on medium-low speed. Please be patient during this step. The dairy-free version takes significantly longer to whip than the original recipe. Blend for up to 10 minutes or until mixture is thick and fluffy and has approximately tripled in volume. For a classic marshmallow protein bar, pour the mixture into the prepared pan and spread it into an even layer. For marshmallow cereal bars, gently stir in 3 cups of your favorite cereal, then transfer the mixture to a saucepan. Refrigerate for at least 2-3 hours or until completely set. Cut into 8 equal pieces and enjoy.
