Shrimp (peeled and deveined) – I like to use larger shrimp Blackened Seasoning – This gives the shrimp all the flavor. If you don’t have blackening seasoning, see the recipe below. White Jasmine Rice (or Basmati Rice) – This rice cooks quickly in the Instant Pot and is great with shrimp. Mango Salsa – This recipe is easy to make using store-bought mango salsa. I love Newman’s Own, but feel free to use whatever you like.
How to make black shrimp bowl
Make the rice: Wash the rice thoroughly and add to the Instant Pot with 2.25 cups of water. Cook on high pressure for 3 minutes. Once cooking is complete, you can manually release the pressure.
Season and cook the shrimp. Add black seasoning to the shrimp. Spray the pan with avocado oil or olive oil spray, add the shrimp and cook for 2-3 minutes, flip and cook for another 1-2 minutes.
Make the beans: Wash the black beans thoroughly and drain the water. Add black beans, salt, garlic powder, and mango salsa to the pot. Cook over medium heat for 3-4 minutes, stirring regularly.
Assemble the dish: Add rice to a bowl and top with black shrimp, black beans, tomatoes, and diced avocado.

It can be made in 10 minutes using frozen rice. You can buy frozen rice or make it in bulk and freeze it in 1/2 to 1 cup portions to make it easier to thaw.

What if you don’t have blackhead seasoning?
You can make your own blackhead seasoning or use Cajun seasoning + 1/4 teaspoon cayenne pepper.
To make your own blackhead seasoning, combine:
1 tablespoon paprika 1/2 tablespoon garlic powder 1/2 tablespoon salt 1/2 tablespoon chili powder 1/2 teaspoon dried mustard 1/4 teaspoon cayenne pepper
What if the shrimp are not thawed
Shrimp thaws quickly, taking about an hour. If you want to cook frozen shrimp, we recommend cooking frozen shrimp in an air fryer.
To thaw shrimp, place a sealed bag of shrimp in cold water on the counter, changing the water every 20 to 30 minutes. Shrimp should be completely thawed within 1 hour.

This black shrimp bowl is delicious even if you have leftovers the next day. I recommend waiting to add the avocado and tomatoes until just before serving.
