Herbs: Although this is called “cilantro” chimichurri, I like to include other herbs to give the sauce a rounded flavor. Feel free to substitute other herbs you have on hand. I like to add fresh cilantro, fresh parsley, fresh mint, and fresh oregano. However, if you run out of these fresh herbs, don’t hesitate to substitute them with dried herbs. You can see that this recipe uses dried oregano. Green peppers: Green peppers give this cilantro chimichurri sauce a spicy kick. You can also make the sauce without pepper if you wish. You can also adjust the amount of serranos and add or add more to your taste. Garlic: I use plenty of fresh garlic in this sauce, but I don’t really recommend using jarred garlic. Vinegar: I like to use red wine vinegar because of its mild flavor. Oil: Use high quality extra virgin olive oil! Spices: You should add sea salt, black pepper, and red pepper flakes. If you want a milder sauce, leave out the chili flakes. Optional: Sometimes I add onions to my chimichurri sauce. Best options include shallots, red onions, and green onions.

Step 1: Coarsely chop herbs and vegetables and add to food processor. Pulse ingredients until clumps form.

Step 2: Transfer the contents of the food processor to a bowl. Stir in the red pepper flakes, salt, black pepper, and vinegar.

Step 3: Gradually pour the olive oil into the bowl and stir until the sauce comes together. Pour the sauce into pint-sized jars and store in the refrigerator until needed.

Pro tip: Be sure to bring the sauce to room temperature before serving, as the oil will solidify as it cools.

🍽 Providing suggestions

As I mentioned earlier, cilantro chimichurri goes well with a variety of dishes. A perfect pairing with smoked brisket, smoked prime rib, and grilled chicken. It’s also great mixed with fish and added to pasta, like in this chimichurri protein noodles recipe.
