I created this sugar-free pudding recipe with chia and chocolate chip cookies for one person so that my dearest friend Deb could have a convenient single-serve meal.

Deb, like many people over 50, eats a high-protein, low-carbohydrate diet and seeks fiber for regularity.

Instructions

Place chia seeds and salt in a pint mason jar.

Place the mason jar on a kitchen towel

Pour the water over the chia seeds and stir with a fork.

Let the chia water mixture sit at room temperature for 4 hours to overnight

Add coconut milk and stevia to the mixture

Cover the mason jar and shake vigorously.
