This Keto Cottage Cheese Fluff is a no-bake keto dessert that takes minutes to make and tastes just like a pina colada cocktail.

Cottage cheese is getting rave reviews on social media. All recipe creators use cottage cheese these days, but I can say that I’ve been using cottage cheese in my recipes since 2012, when I added it to not only my spinach pie but also my chocolate smoothie. I’m happy about that.

You can find a variety of cottage cheese options at your local grocery store, but specific brands vary in taste and texture.

Fat-free cottage cheese is not recommended because it is not as satisfying and creamy as full-fat cottage cheese. Both my daughter and I are lactose intolerant, so we like to use lactose-free cottage cheese.

My favorite brand is Green Valley Organic, but the Lactaid brand is also a great Good Culture brand as is.

In my opinion, easy recipes like this are what make the keto diet sustainable. Even if you’re on a low-carb diet, a traditional coconut pineapple fluff salad is high in sugar and carbohydrates.

According to the app Chronometer, the only thing that rivals my keto dessert fluff is a mixed fruit salad topped with whipped cream and mini marshmallows.

The whipped topping is obviously not the same since I’m not using Cool Whip. A 1/2 cup serving contains 17 grams of carbohydrates.

Cottage Cheese Fluff Keto Pina Colada recipe contains 4 grams of total carbohydrates. It contains 1 gram of dietary fiber, so if you follow the net carbs for keto recipes, this will contain 3 grams of net carbs.

Can I replace the cottage cheese?

You can also swap out the cottage cheese if you don’t really like cottage cheese, but I promise you that you won’t know if this recipe contains cottage cheese.

Blending the cottage cheese with all the extracts I used and using a food processor creates a very creamy texture that makes the curds in the cottage cheese less noticeable.

I recommend ricotta instead. That’s because ricotta can provide the same amount of protein, but adds more fat and carbohydrates to the recipe.

You can also use plain Greek yogurt, which maintains a creamy consistency.

I think you could replace the cottage cheese with cream cheese, but it’s such a rich texture that you might not even need gelatin. Cream cheese will also mix better if you let it come to room temperature.

What else can I use besides pineapple extract?

If you don’t want to buy pineapple extract, you can also use canned pineapple juice if you have it on hand. If you live in a place where fresh pineapple is available, that’s also an option.

However, please note that adding fresh or canned pineapple juice will increase the carbohydrates in the nutritional information below. If you like a strong pineapple flavor, I think it’s best to use extract.

If I don’t have coconut stevia, can I use coconut extract?

If you don’t want to buy coconut stevia, you can add 1 teaspoon of coconut extract to the coconut cream used in this easy recipe.

What other low-carb sweeteners can I use?

You can use your favorite low-carb sweetener, but I love flavored coconut stevia. This really enhances the combination of flavors and the tropical feel of being on a tropical island.

You can also use vanilla stevia if you have it on hand, but if you don’t, use my sweetener guide and conversion chart to determine how much to use.

Instructions

Place the cottage cheese and canned coconut milk in a food processor to remove any lumps. Let’s set it aside.

Pour coconut water into a small saucepan and heat over low heat on the stove, or in a microwave-safe bowl, until boiling, 1 to 2 minutes. Add gelatin little by little and mix well until completely dissolved and there are no lumps. Set aside to cool.

Add the heavy cream to the food processor and blend until melted. Add sweetener and flavor extracts and blend again. Taste to determine if it is sweet enough. Pour in the cooled gelatin and mix again.

Spoon 1/2 cup of fluff into a dessert cup or use a piping bag if desired.

Optionally top with toasted unsweetened shredded coconut.

Storage: Store in an airtight container or in the refrigerator for up to 3 days.
