Instructions

Preheat the oven to 350°F (175°C). Grease the bread into the bread or arrange parchment to easily remove it. In a large bowl, mix almond flour, true nutritional vanilla vegan protein powder, baking soda, cinnamon, nutmeg and salt. Mix until well mixed. In another bowl, whisk together pumpkin puree, eggs (or flax eggs), almond milk, melted coconut oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold sugar-free chocolate chips to allow even distribution throughout the batter. Pour batter into the prepared pan and smooth the top. Bake for 45-50 minutes or until the toothpick inserted in the center is clean. Let the bread cool in a pan for 10 minutes and then transfer to a wire rack to cool completely. Enjoy a healthy pumpkin chocolate chip bread with coffee or tea!
