How to make grain-free vegan mini peanut butter pies

Preheat oven to 350°F and line a baking sheet with parchment paper. In a mixing bowl, combine almond flour, cocoa powder, date sugar, and melted vegan butter. Stir until a dough forms. Divide the mixture into 3 equal parts and shape each into a small circle on a baking sheet. Use your fingers to raise the edges slightly to make them look like mini puff pastry. Bake for 15 minutes, then remove from the oven and allow the dough to cool completely. Prepare 1 serving of Peanut Butter Pie Dip according to recipe instructions. Blend until silky smooth and creamy. The filling should be thick and fluffy, and you can’t help but taste it right out of the food processor. Once the dough has completely cooled, spoon the peanut butter filling into each pie shell. Smooth the surface with a spoon or spatula and transfer the pie to the refrigerator. Chill until filling is set, at least 2 hours. Before serving, drizzle with chocolate sauce and sprinkle with chocolate chips and chopped peanuts for the ultimate peanut butter cup look. Add a pinch of flaky sea salt to take it to the next level.
