One of my sleeper favorite recipes is these tortilla pizzas. It’s such an easy and simple recipe that I thought I’d post it. But the truth is, you all love it when I doubt myself. I think the reason it’s so popular is because it’s so easy.
These mini tortilla pizza cups also fit that rule. These are basically mini versions of my tortilla pizza recipe, but baked in a muffin tin. I mean, everything is better with miniatures, right?
So why make this recipe?
Kid friendly – my kids love this. Is it because it’s mini size? Is it because it tastes like pizza? Whatever the reason, I’m so glad they liked it. It’s the perfect vehicle for hiding vegetables. EASY TO CUSTOMIZE – You can completely customize these tortilla pizza cups to make them your own. You can use whatever toppings you like or have on hand. Ready in under 20 minutes – this includes prep work. It only requires 10 minutes of baking time, so you can rely on it for a quick weeknight meal.
Ingredients for mini tortilla pizza cups
Olive Oil Spray – Other cooking sprays for greasing muffin tins. 10-inch tortillas – feel free to use flour, corn, or grain-free. You get 4 rounds per tortilla. Marinara sauce – or other pizza sauce. The homemade tomato sauce is probably my favorite. Mozzarella cheese – or other cheese that melts quickly. Desired toppings – see suggestions below.
You will also need a muffin tin and a round cookie cutter (2-3 inches).
How to make mini tortilla pizza cups
Step 1: Cut out the circle
Using a round cookie cutter, cut out 12 small round shapes from the tortilla. You get 4 rounds per tortilla. Place a small tortilla round into each muffin slot and press to form into the slot.
Step 2: Prepare tortilla pizza cups
Divide the marinara sauce evenly between each cup (about 1 tablespoon in each cup). Add your favorite toppings. Place shredded mozzarella cheese on top.
Step 3: Bake
Bake in the oven for 8 to 10 minutes or until the cheese is melted and the cups are golden brown. Use a knife or spatula to remove mini tortilla cups and enjoy.
topping suggestions
Vegetables – Add a few tablespoons of fresh tomatoes, red onions, and red or green peppers. Olives are also delicious if you like. For sneaky veggies, try finely chopped cooked spinach or broccoli.
Meat lovers – Add about 1/4 cup of meat, such as pepperoni, cooked sausage, or ground beef.
Pesto – Use store-bought pesto or homemade pesto in place of pizza sauce. Top with your favorite cheese. May I recommend this sun-dried tomato pesto?
Mexican Style – Use enchilada sauce instead of pizza sauce. Top with Mexican blend cheese and your favorite toppings.
BBQ Style – Use BBQ sauce instead of pizza sauce.
Buffalo Style – Use buffalo sauce in place of pizza sauce and top with blue cheese crumbles.
FAQ
Using a small cup or mason jar and a knife, draw a circle around the cup. This way you can create perfectly round tortilla rings without using cookie cutters.
You can make it gluten-free by using corn tortillas or grain-free tortillas.

absolutely! This recipe can easily be doubled, tripled, or made to feed as many mouths as you want. If you want to bake them at the same time, you will need multiple muffin tins.

Precautions for storage

To freeze: Freeze leftovers on a sheet pan for 3 to 4 hours. Place frozen pizza cups in a ziplock bag and freeze for up to 3 months. Thaw in the refrigerator overnight or bake in the oven for 10 minutes.
