For the past few weeks, since Mother’s Day to be exact, I’ve been wandering around the property with my head down looking for mushrooms. Morel mushroom to be exact. 🍄
They should start showing up around Mother’s Day (God’s gift to moms in Montana) around these parts 😉. I’ve been working hard to find this highly prized mushroom, so I’m surprised I didn’t come across a bear.
After countless hours of searching, I’ve collected enough morel mushrooms to come up with some morel mushroom recipes. This recipe for scrambled eggs with cheese and morel mushrooms will hopefully be the first of many morel mushroom recipes.

These are the best cheesy scrambled eggs I’ve ever had! Not only do they have great flavor, but they’re also super easy to prepare. You don’t need a lot of morels, so you can save the harvested morels for other recipes. Eggs and morels are both nutritious and high in protein, making this recipe perfect for breakfast.
Scrambled eggs with cheese can be prepared in advance and served in burritos that can be reheated in the microwave.

🔖 Materials and Substitutes
Eggs: You can use fresh or freeze-dried eggs in this recipe. Mushrooms: I used about 1/2 cup morels, but feel free to add more if you have them. What should I do if I don’t have morels? You can also make this recipe using other types of mushrooms. Bacon: Rendered bacon fat is used to cook the remaining ingredients. If you’re substituting turkey bacon or low-fat sausage, you’ll need to add butter or olive oil instead. Potatoes: If you don’t have potatoes, you can use frozen fries, hash browns, or tater tots instead. Creole seasoning: Creole seasoning can be replaced with sea salt, black pepper, or any other seasoning of your choice. Cheese: Instead of cheddar cheese, try Mexican blend or Colby Jack cheese. Serrano Pepper: Serrano pepper is optional, but recommended if you like spicy foods. Salsa or Hot Sauce: I like to serve my cheesy scrambled eggs with Fire Roasted Salsa, but you can use Pace Picante Salsa or your favorite hot sauce as well.
🍳How to make scrambled eggs with cheese
Step 1: Start by chopping the bacon and vegetables. Next, add the bacon, onions, and potatoes to a cast iron skillet or large nonstick skillet. Season with half the Creole seasoning. Cook for 5 to 10 minutes or until potatoes begin to brown and onions begin to brown.



Step 2: Add morel mushrooms, serrano pepper, and garlic. Continue cooking over medium heat for another 5 minutes or until bacon is crispy and potatoes are cooked through.



Pro tip: Potatoes take the longest to cook. If you can easily cut the potatoes without any resistance, they are fully cooked.
Step 3: Turn off the stove and place the eggs in a measuring cup or medium bowl. Sprinkle with remaining Creole seasoning. Beat the eggs vigorously with a whisk or fork for 1 minute. Turn on the stove and set it to low to medium-low heat. Crack the eggs into the frying pan and mix with the other ingredients.



Step 4: Use a spatula to scrape the bottom of the pan and swirl the egg mixture to form soft curds. This will prevent the eggs from sticking to the pan or forming a hard surface. When the eggs are almost set, turn off the heat and add the cheddar cheese.



How to make a breakfast burrito
Heat the charred tortillas over an open flame to soften them. Spread sour cream in the center of the tortilla and serve with cheesy scrambled eggs. Add cilantro and salsa ranchera or hot sauce. Wrap the tortilla into a burrito and enjoy.

Incorporating air into the eggs makes them fluffy. If you like buttery eggs, melt a tablespoon (or more) of butter in the skillet before adding the eggs.
