Instructions:
Preheat the oven to 176°C/350°F. Melt the coconut oil and add it to a mixing bowl with all ingredients (except Greek yogurt and toppings). Mix until smooth and well combined. Coat a donut pan with nonstick spray and pour the batter evenly into the pan, making sure not to cover the donut holes. Bake for 10-15 minutes, until a toothpick comes out clean. Let the donuts cool slightly, then top with Greek yogurt, sprinkles, or homemade frosting (see below).
