Preheat the oven to 350°F and prepare a muffin tin with 10 cupcake liners. In a mixing bowl, combine almond flour, cocoa powder, sweetener, protein powder, baking powder, and salt. In a separate bowl, combine Quest Mocha Latte Iced Coffee, eggs, ricotta cheese, and oil until smooth. Add dry ingredients to wet ingredients and mix. Spoon mixture evenly between 10 liners. Bake the cupcakes for 16-18 minutes until cooked through. Let cool. Mix the frosting ingredients together and use a butter knife to spread the frosting over each cupcake. Sprinkle with cocoa powder and place coffee beans on top.
