peppermint bark donut
Matte:
1/2 cup unsweetened white chocolate chips 1/2 tablespoon coconut oil 2 tablespoons crushed candy canes
method
Preheat oven to 350°F and prepare two standard donut pans coated with nonstick spray. In a bowl, combine flour, cocoa powder, zero calorie sweetener, protein powder, baking soda, baking powder, and salt. In a separate microwave-safe bowl, crush the peppermint bark bars into small pieces and add the milk. Place the bowl in the microwave for 45 seconds. Use a fork to stir until smooth. If there are still large chunks, put it back in the microwave for another 15 seconds. Let cool slightly, then add oil and eggs and mix. Add the wet ingredients to the dry ingredients and stir until a batter forms and no dry parts remain. Transfer the dough to a large resealable plastic bag and cut a small hole in the corner to create a piping bag. Pipe the dough into the 8 donut holes. Bake the donuts for 12-15 minutes until cooked through. Let cool. Once the donuts have cooled, melt the white chocolate chips and oil until smooth. Dip each donut in white chocolate. Top with candy pieces. Allow chocolate to set for 10 minutes before serving.
