Preheat oven to 350°F (175°C). Grease a donut pan with coconut oil or nonstick cooking spray. In a large bowl, mix together flour, vegan protein powder, cocoa powder, baking powder, baking soda, and salt. In a separate bowl, combine almond milk, syrup, melted coconut oil, vanilla extract, and peppermint extract until smooth. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. Gently fold the crushed vegan chocolate cookies into the batter. Spoon the batter into the prepared donut pans, filling each cavity about 2/3 full. Bake for 12-15 minutes or until a toothpick inserted into a donut comes out clean. While the donuts are baking, prepare the vanilla icing. In a small bowl, mix together the powdered sugar, almond milk, and vanilla extract until smooth and creamy. Adjust the consistency by adding more powdered sugar or almond milk as needed. Once the donuts are baked, remove them from the oven and let them cool in the tin for 5 minutes. Then transfer to a wire rack to cool completely. Once the donuts are completely cool, dip the tops in the vanilla icing or use a spoon to pour the icing over the donuts.
