I’m doing something I haven’t done in a long time. After years of working from home full time, I go to work in an office a few days a week.
This has some adjustments. You forget about various items you take for granted at home, like your laptop, office keys, lip balm, and more. Your clothes are too warm or not warm enough. And most tragically, I forgot my lunch on the counter.
Lunch has been haphazard for me for a long time. At home, we often bite into a handful of this and a handful of that and call it a meal. But it turns out that if you actually eat a nutritious lunch, you’re less likely to devour the contents of your fridge when you get home at the end of the day.
So I started preparing lunch for the next Sunday of the week. These protein bowls have become one of my favorite lunches. This is less of a recipe and more of a formula: starch base + protein + veggies + sauce. Feel free to make it your own.
