2 grated zucchini 1/2 block feta cheese 300g Ketohana Coconut & Almond Granola 1 tbsp Zaatar 1/4 tsp salt 4 tbsp Greek yogurt 10g chopped dill Juice of 1/2 lemon Pinch of salt 1-2 garlic cloves
How to make zucchini and feta keto fritters
Drain the grated zucchini (either in a colander or in a nut milk bag).
Blend the coconut and almond granola in a food processor until smooth and add to the grated zucchini.
Add eggs, za’atar, and salt and mix until well combined.
Add feta cheese and mix.
Add a small amount of the mix to a nonstick frying pan with olive oil and fry on both sides (almost like a pancake).
Mix Greek yogurt, dill, lemon, and salt.
